Blueberry muffins



Without a doubt the easiest recipe to make delicious blueberry muffins!




Ingredients (for 6 muffins)
- 25 g butter
- 150 g self-raising flour
- 50 g sugar
- 1 egg
- 1 dl milk
- 50 g blueberries







Preheat the oven on 180 °C.

Sift the flour in a big bowl. Add the sugar.


Melt the butter in a small pan on a low fire till it's fluid but not transparent.


Whip up the egg with the milk. Add the melted butter and mix them together.
Add this mixture to the flour and sugar and stir with a fork until it's well mixed.


Add the berries and stir carefully so you don't damage them.


Put the batter in the muffin cups (paper, silicone or foil).


Bake them in the oven for about 20 minutes (check them by putting a knife in the middle of the muffin. When there's no batter sticking to the knife, your muffins are ready).

Let them cool down and enjoy!






I used frozen blueberries. You won't taste the difference in these muffins and they're much cheaper than the fresh ones. There's only one small disadvantage: when they defrost, they become very soft so the batter can become a bit blue, like you can see at the pictures. Nevertheless, the taste stays exactly the same and in my opinion, that's the most important thing :)
