Blueberry lemonade

When life gives you blueberries... make blueberry lemonade!



This is a very easy recipe to make your own blueberry lemonade. It takes only 20 minutes to prepare and it's much healthier and, in my opinion, tastes better than the soft drinks you buy in the stores. Perfect refreshment on a hot day or you can always add some vodka to make your own delicious cocktail! ;-)

Ingredients (for 1,5-2 l lemonade):
- 1 cup blueberries
- 1/2 cup finely granulated sugar (or use Stevia)
- 3/4 cup freshly squeezed lemon juice 
- 6 cups water (1 cup = 250 ml)

Instructions:
First, we'll make the blueberry syrup. Combine the sugar and 1 cup water in a medium saucepan over medium heat, stirring until sugar is dissolved. Stir in the blueberries and bring to a boil; reduce heat and let the mixture simmer until blueberries have broken down (it usually takes about 3-4 minutes).

Strain the blueberry mixture through a fine sieve; let cool down. 

In a large pitcher or bottle, whisk together the blueberry syrup, lemon juice and 5 cups water. Place in the refrigerator until chilled.


Serve over ice cubes and blueberries if desired.
